About This Wine
François Labet and his team make some first rate Burgundy, including several of the most prestigious Clos de Vougeot, so they know what they are doing. This cuvée is sourced from a number of vineyards, managed organically or lutte raisonnée; Jambles lies behind the vineyards of Givry, Aluze, borders the Côtes du Couchois, and there is then a number of smaller sources in the Côte de Beaune. All of these sites sit on Burgundy's classic limestone and clay soils and the youngest vines involved are 25-years old. In terms of the élevage, fermentation took place in tank, and the wines were then raised in used Château de La Tour barrels (25% in one year old fûts, the remainder in 2 to 3 year). Although Labet is well known for his whole bunch winemaking, the fruit for this wine was almost entirely de-stemmed. The result is a soft and juicy Bourgogne that is perfect drinking now.
