James Halliday – P58 clone planted '95, whole-bunch pressed for full solids wild ferment in French oak (60% new), matured for 10 months. A very complex struck match bouquet, the palate leaving 10-15 seconds to throw its irresistible power that has a whole grapefruit crushed into a health juice. This is highly polarising, more Burgundian that Australian. Made by Ray Nadeson.
About This Wine
The bouquet is overt with suggestions of burnt fig, almond croissant, crème brûlée, and wind fall peaches. The palate is jammed with juicy peach, pear, ripe cantaloupe and vanilla bean. The wine is especially generous across the entire palate and dances with flesh, creaminess and minerality. With wonderful poise lent from bright natural acidity the wine has an impressively long, flinty, almost caramelised finish. Enjoy now with double cream soft cheese or cellar medium to long term for added complexity to accompany Pavlova.
