Sauvage Sauvignon Blanc is truly grown in the vineyard. Sauvage refers to the wild yeasts, which live on the outside of the fruit and these conduct the fermentation which is done in 500 L French Oak puncheons. Sauvage remains sur lie ( ‘lees’ are the fine grape solids and yeasts full of flavour and texture) in the puncheons for 10 months, allowing for generous textures and perfumes. The large oak allows a gentle ingress of oak elements. The addition textural and flavour elements make Sauvage a delicious match for chicken, veal, and flavoursome sea food.
