We start by using straight bourbon sourced from Indiana and rebarreling it into a maple brulee barrel. A maple brulee barrel is an ex-bourbon barrel that aged maple syrup, then is sent back to a cooperage. The cooperage brulees the wet maple-syrup barrel to caramelize the sugars in the oak, reconstructs the barrel and sends them to us. Secondary maturation in these maple brulee barrels is unmatched. The new oak barrel is 24 month seasoned, so the wood aged 2 years before becoming a char 3 heavy toasted barrel. The extended finishing time for a total age of 8yr results in a balanced, rich and sweet wheated bourbon.
