The fruit was harvested in the cool of the early morning to preserve quality and was immediately whole bunch pressed at our Pokolbin winery. The cloudy juice was transferred to French oak barrels and puncheons where fermentation took place. A small portion of the wine also underwent malo-lactic fermentation to add a textural mouth feel. After Fermentation the wine was matured for nine months in oak with fortnightly lees stirring to add complexity before final blending and bottling.\u003c\/p\u003e\n\n\u003cp\u003eCOLOUR \n\u003cbr\u003ePale yellow, with green hints.\u003c\/p\u003e\n\n\u003cp\u003eBOUQUET \n\u003cbr\u003eIntense aromas of stonefruit, green melon and grapefruit with savoury oak.\u003c\/p\u003e\n\n\u003cp\u003ePALATE \n\u003cbr\u003eThe palate is rich and powerful with white peach and grapefruit flavours. The fruit was handpicked in early February, whole bunch pressed and cold settled over 2 days. The clean juice was then racked and fermented at a cool temperature of 14-15°C for 15 days. The wine was then racked off yeast lees, sulfured and lightly fined with skim milk, before being filtered and bottled early to retain freshness.\u003c\/p\u003e\n\n\u003cp\u003eCOLOUR \n\u003cbr\u003ePale straw with green hues.\u003c\/p\u003e\n\n\u003cp\u003eBOUQUET \n\u003cbr\u003eAn aromatic nose of lime juice, green apple and kaffir lime leaf notes.\u003c\/p\u003e\n\n\u003cp\u003ePALATE \n\u003cbr\u003eAn intensely flavoured palate of citrus fruits along with crunchy green apples. The fruit fermented in small open fermenters. Fermentation lasted 7 days with gentle hand plunged twice a day. Following pressing it was put to a 1 year old French oak fouderer for malolactic fermentation and maturation for a further 14 months. The wine was then filtered and bottled.\u003c\/p\u003e\n\n\u003cp\u003eCOLOUR \n\u003cbr\u003eDeep red with a purple hue.\u003c\/p\u003e\n\n\u003cp\u003eBOUQUET \n\u003cbr\u003eRed cherries, plums and mulberries with hints of savoury spice.\u003c\/p\u003e\n\n\u003cp\u003ePALATE \n\u003cbr\u003eIntense flavours of cherries and plums with complex dark chocolate and structural oak.
