As well as Mourvèdre (80%), the Gros' Noré red also has a dash of Grenache (15%), and old vine Cinsault (5%). The wine is aged for 18 months in old 60 hl wooden barrels (foudres). There are no new barriques used. Alain places a heavy emphasis on ploughing and working the soil in the springtime. All grapes are hand harvested and sorted and bought quickly to the winery where the grapes are moved onto a vibrating table to remove unwanted material before being de-stemmed. The Sangiovese was harvested on 17 and 19th\u003cbr\u003eMarch and the Tempranillo just prior on 10th – a touch laterthan the previous year.\u003cbr\u003eThe Sangiovese was simply destemmed, chilled and pressed using only the free-run\u003cbr\u003efraction of the juice. It was then fermented at moderate temperatures using, as always,\u003cbr\u003eindigenous yeasts only. It was then matured on gross lees for three months postfermentation to add additional texture. The Tempranillo was handpicked and, after\u003cbr\u003echilling, whole bunch-pressed directly to old oak for fermentation. Fermentation took\u003cbr\u003efour weeks, and the wine received a further eight weeks’ maturation in barrel.
