Their section is the only one planted East to West. They use horses specifically for this vineyard for plowing, along with allowing grass to grow in the rows to encourage competition. They see so much more ‘life’ in the soil now each year due to the more gentle treatment vs using a tractor.\u003c\/p\u003e\n\n\u003cp\u003eHand picked, whole-bunch pressed to tank. Left to settle overnight. Racked off gross lees to barrel, of which 20% is new. Wild fermented followed by malolactic. Left on fine lees for 12 months, battonage happens but frequency dependant on vintage.
