Bannockburn Sauvignon Blanc 2015
Primarily cropped from the 1980 plantings on the eastern edge of the Winery Block, the 2015 also includes the first crop from young vines planted on the Olive Tree Hill. For this inaugural vintage, the fruit was split three ways: one third was destemmed and lightly crushed before fermentation on skins for one week, finishing in older puncheons, another third was whole bunch pressed to puncheons and the remainder whole bunch pressed to tank. A wine of wonderful texture and complexity, there is a whisper of varietal character in that sort of nettle, resin, and vibrant gooseberry range. It also offers fantastic salty minerality (very Bannockburn) and some subtle skin contact complexity, alongside racy texture and pulp with excellent drive and length. In sum, more flesh and fruit.
