The Grenache (70%) and Mataro (30%) were picked simultaneously and fermented together using wild yeast, allowing the varieties to integrate from the very start rather than trying to find balance in the blending room later.\u003c\/p\u003e\n\n\u003cp\u003eThe wine spent 15 months in seasoned French puncheons, ensuring the oak remains a background element. In the glass, it offers a compelling mix of plushness and structure.\u003c\/p\u003e\n\n\u003cp\u003eThe Grenache drives the palate with generous red berry fruit and floral lift, while the Mataro grounds the wine with savoury spice and a distinct earthiness. Underneath it all runs the signature Blewitt Springs ultra-fine tannin profile.
