Each site sits within 10km of the Indian Ocean, which cools the fruit zone every afternoon. Hand-picked from 20 February with only select bunches delivered to the winery and chilled overnight. Whole-bunch pressed, wild fermented with 100% juice solids, and matured nine months on lees in new and seasoned French oak barriques, hogsheads and puncheons (40% new) before meticulous barrel selection.\u003cbr\u003e\u003cbr\u003ePale straw with a green hue. Brioche, lemon cream and white flowers on the nose with subtle oceanic notes; toasted almond and biscuit from oak maturation play a supporting act to citrus-driven fruit.
