L.A.S. Vino CBDB Chenin Blanc Dynamic Blend 2016
The wine was split into thirds; with a third barrel fermented in old oak, a third put into granite like vessels and a third undergoing malolactic fermentation. The wine was left for 10 months in these vessels to mature with a little bit of stirring. Nothing except a touch of sulphur (for stability) and a little clay (for clarity) was added prior to bottling the wine unfiltered.
The Wine Front – Pear, spicy biscuits, jasmine, honey, fresh apricot. Medium bodied, quite fleshy, with quince and ripe lemon as bonus flavours, a firm briny tang of acidity, a milky and powdery texture, and a spicy finish with a slight watermelon rind bitterness. Nice wine.
