Where the white label Pecorino is all about primary fruit, the Little Gem is all about complexity and texture. 40% of the free run juice is fermented on full solids with wild ferment in older French oak barriques. We ferment the pressings component in oak as well and this makes approximately 20% of the final blend. The balance is clarified, racked and inoculated with a neutral yeast and fermented in stainless steel at around 14 degrees.
