Pressed off, racked to fine lees, wild fermented in tank. Lees stirring for 12 weeks. No malolactic. Light filtering prior to bottling. Sourced from Waikerie and Barmera, sub regions of the Riverland from sandy soils. Fiano’s ancestral home is Avellino in Campagnia and as Brendan mentions Fiano is often referred to there as the ‘Riesling of the South’.
