The lowdown:
Premier Cru Chablis comes from fruit grown strictly within superior named vineyards in the Chablis area - Fourchaume being the case here. It's unoaked in the Seguinot-Bordet style, but the time spent on lees combined with the quality of the fruit mark this out as a Chablis of some distinction. The crisp citrus character has an accompanying richness and texture that lingers long and pleasingly on the tongue.
The Producer:
Long established in the region Jean-François Bordet can trace his family's roots in Maligny right back to 1590. This well-regarded estate of which he's the current custodian lies on the right bank of the river Serein, where the rich Kimmeridgian soils give the wines the minerality so typical of great Chablis. His unusual horizontal fermentation tanks give the wines more lees contact during maturation, which add a layer of extra complexity to his beautiful, pure, wines.
When to drink:
Meaty fish like turbot, or halibut are just the ticket here. It's pretty versatile though and white meats and vegetarian dishes will pair just as well.

Wines of Chablis
Arguably the most uniquely tasting Chardonnay in the world, most people are blown away to discover this special type of Chardonnay for the first time. The cool climate region produces wines with more acidity and less fruit flavours, but a unique flinty note derived from the soils.
Although considered a part of the Burgundy wine region, Chablis is closer in distance to Champagne which it shares an exceedingly rare and unique soil with. Kimmeridgian soil is not found anywhere else in the world except in southern England, Champagne and Chablis. A 180-million-year-old geologic formation of decomposed clay and limestone, containing tiny fossilized oyster shells, this soil type produces wines full of minerality, salinity, intensity, and finesse.
In Chablis they use a similar ranking system to that of Burgundy. From Grand Crus at the top, to Premier Crus, to Chablis and Petit Chablis at the bottom.
