Before it was tamed, the Mentalbach carried sand, rubble and rocks between Höhereck and Loibenberg into the Danube valley after heavy rainfall occurrences. In contrast to the smoothly flowing waters of the Danube, the sediments from torrents are coarse-grained and unsorted. The rubble, only rounded at the edges, attests to a short transport path. Compared to the terrace locations with Gföhl gneiss, the soils in the Schütt area are sandier and stonier, while also very deep. Knoll's vines are at 240m on pure Gneiss-based primary rock. The vineyard tends to produce very focused, straight and powerful wines with the most minerality. Vines are trained on a modified Moser system at a density of 3,500 4,000 per hectare and with a row spacing of 2.4–2.8m. Vine age is between five and 50 years, with an average of 25 years. Selectively hand harvested. Gently airbag pressed as whole bunches with some skin contact. Fermented in cask and stainless steel tank from 500 to 5,000 litres depending on batch quantity. Fermented for 10 to 20 days and temperatures between 23 and 26 degrees. Matured on lees for six to eight months with no bâtonnage.

About Austrian Wine

Austria is a country with over 4000 years of wine making history, however, it unfortunately doesn't seem to enjoy the status and popularity that the high quality of it's wines deserve. Decades later, the country is still feeling the effects of a scandal in 1985 that destroyed its credibility at the time. 

Grüner Veltliner is the most important wine made in Austria, distinguished by its lightly fruity, noticeable spice and characteristic white pepper notes. This variety comprises roughly a third of all plantings. In terms of volume, Riesling plays a much smaller role than in Germany, but is responsible for some of the most appreciated dry white wines made in the country.

In red varietals, Austrian native varieties are dominant and include the tart and peppery Zweigelt, spicy and dense Blaufränkisch and juicy Saint Laurent.
