James Halliday – Oddly, this is quite lean across the palate, although fresh flavours flourish. Cassis and currants, a cottage garden of herbs with wintergreen and woodsy spices. All that appeals. Vineyard

This sub-region of the Yarra Valley is recognised as a premium Cabernet Sauvignon area and with our five acres of vines now approaching 25 years of age, they are producing Cabernet Sauvignon with great depth, concentration, structure and just enough herbaceousness to let you know it’s cool climate Cabernet. Grown in ancient grey clay and with VSP trellising to encourage light into the fruiting zone.

Winemaking

In 2019, the Cabernet Sauvignon grapes were harvested in two picking days, two weeks apart, giving a spectrum of flavors. The fruit was destemmed, lightly crushed and gravity fed to the fermenters, with a little stalk added for seasoning. Wild yeasts kicked off the ferment and the winemakers combined pump-overs and plunging to mix the must. A long and gentle maceration post-ferment built the wine’s structure. Maturation and wild malolactic fermentation occurred in 300L French oak barrels.

Sensory Analysis

Deep ruby color with a purple tinge showing its youthfulness. The nose smells of classic Yarra Valley Cabernet, with violets, cigar box, vanilla, and red bell peppers lifting from the glass. The palate shows elegance and poise as the dark cherry and black current transition to charred meat, graphite, and tea. The fresh acidity and silky tannins will provide the structure to hold this wine together for 10+ years, but it is so very drinkable right now.

Yarra Valley Wine

The Yarra Valley wine region is the most important area of wine production in Victoria today, and with its proximity to Melbourne, also the most visited in the state.

Yarra Valley is split into the Upper Yarra and the valley floor. The Upper Yarra is cooler in climate due to its elevation and coupled with younger, fertile, red soils produces most of the region’s notable varietals: Chardonnay and Pinot Noir. The valley floor is warmer and has predominantly grey soils with pockets of granite and limestone.

Pinot noir has long been considered a notoriously difficult variety to grow. However, the cool climate and longer growing seasons of the Yarra Valley allow the fruit to develop full flavoured and ripe character.

Chardonnay in the past has long been associated with a deep oily, buttery style that experiences full malolactic fermentation and great amounts of oak. This style has since fallen out of favour and wine makers in the Yarra Valley have capitalized on this trend to produce leaner, acid driven Chardonnays that are closer in style to those from Burgundy.
