The Wine Front – Biodynamic farming, lees maturation, attention to detail, great vineyard sites. Rudi Bauer of Quartz Reef has many positives in the manifestation of his life work. Beyond that, and so often it’s hard to separate the person who makes the wine from the wine itself, he’s an outstanding human. And hilarious. That being said, it means little when wines are in brown paper bags being tasted. This wine leapt from the pack. Incredible intensity, inward concentration, a knife edge of acidity in finely wrapped layers of toastiness, marzipan, brioche with a sleek, lean profile of green apple and citrus. Fine, fine bubbles add dimension and freshness. Aside its precision, it’s gorgeous to drink, refreshing the palate with each sip, leaving lingering detail of the presence of the wine. Insanely good drinking. It’s fine wine personified. Kudos here.

Robert Parker/Wine Advocate – The NV Brut Premiere Cuvee is exceptionally polished and refined from the very first taste. Lemon, grapefruit, green pears and flowers are some of the many notes that are woven together in this classy, totally polished wine. The two-plus years of bottle age post-disgorgement are a great example of how first-class NV Champagnes can develop beautifully in bottle, something I have seen time and again with Bruno Paillard’s wines. Hints of hazelnut, almond, crushed rocks and pastry add elements of complexity, yet the wine retains its classic sense of energy and vibrancy.

Robert Parker/Wine Advocate – The NV Brut Premier Cru is a very pretty wine laced with expressive notes of citrus, lemon, white peaches and flowers. This mid-weight, floral Champagne will make an excellent aperitif, but it can also stand up to lighter-bodied foods. It is a beautifully balanced wine with plenty of Chardonnay character.

Wine labelled as Champagne must come from the French region of the same name around the towns of Epernay and Reims. Here, winemaking goes back to the Middle Ages, and sparkling wine is the specialty. This is no ordinary sparkling wine — it’s made with the labour-intensive and time-consuming Méthode Champenoise. Citrus peels and green apples are persistent in this lovely sparkler. The wine doesn’t undergo Malo-lactic fermentation, so it is crisp and tart — the ideal apéritif.
