After experimenting with Tumbarumba Chardonnay for his "Project C" in 2022, Bryan landed on a unique approach—combining skin contact, reduction, and a touch of oxidation to bring out the best in this exceptional fruit.
Wild-fermented in a mix of wood and foudre, this Chardonnay has texture and depth without any overpowering oak. Instead, it’s fresh and lively, with aromas of citrus, white peach, and a hint of almond. The wine’s crisp acidity and minerality make it bright and cellar-worthy, showcasing the high-altitude elegance of Tumbarumba.
Bryan calls this Chardonnay “a pleasure” to make, and with only a limited release, it’s a pleasure to drink as well. Perfect now or cellar for several years to see its complexity unfold.
