If you’ve followed Ricky Evans’ work with Two Tonne Tasmania, you’ll know he’s been obsessed with site expression for years. This Chardonnay from the Three Wishes Vineyard is a culmination of that passion - a richer, more textured expression compared to its Waverley sibling, capturing the sunny, north-facing warmth of this Tamar Valley site.

Planted in 2000, Three Wishes sits in a protected valley near the Tamar River, producing Chardonnay with power, weight, and drive while still maintaining pristine acidity. In 2022, Ricky picked in two passes to balance freshness and ripeness, fermenting the wine in a mix of new, second-, and third-use French oak puncheons before a further five months of lees aging in tank.

The result is a Chardonnay that walks a fine line between generosity and precision. Expect aromas of golden peach, ripe citrus, hazelnut, and a touch of spice. The palate is layered and creamy, with notes of grilled nectarine, lemon curd, and roasted almonds, held together by a refreshing acid backbone and a long, savoury finish.

For those who love powerful yet balanced Chardonnays, this sits alongside some of Tasmania’s best.

Tasmanian Wine

The Tasmanian wine region is a cool climate region, the most southerly of all wine regions in Australia. Due to the lower temperatures, the area grows primarily Chardonnay, Pinot Noir and Sauvignon Blanc, with smaller plantings of Riesling, Pinot Gris and Cabernet Sauvignon.

More recent vintages since 2005 have been positively impacted by the effects of global warming. With slightly higher temperatures the grapes are ensured to ripen fully and produce more vibrant wine.
