A bit of a new beginning for us this year as we have been able to source some young vine Gruner from the East Coast of Tasmania to blend with our 19 year old vines from our vineyard. The winemaking is unchanged. The grapes were trodden on in bins and left to soak on skins for 24 hours. They were then pressed to tank for a natural ferment on full solids. We stir the tank daily to build some texture on the palate before it settles after ferment on its solids, and is only racked off solids in time for bottling unfined or filtered.
Slightly more fruit driven than usual with the addition of the East Coast fruit. There’s almond and oregano on the nose, the palate has some Lemon Sorbet and rock melon flavours. Its slightly viscous, but has a refreshing acidity to finish, and some texture from the 24 hours on skins. – Joe & Lou Holyman

Tasmanian Wine

The Tasmanian wine region is a cool climate region, the most southerly of all wine regions in Australia. Due to the lower temperatures, the area grows primarily Chardonnay, Pinot Noir and Sauvignon Blanc, with smaller plantings of Riesling, Pinot Gris and Cabernet Sauvignon.

While Tasmania makes great still wines, the exceptional Chardonnay and Pinot Noir also make for excellent sparkling wines.
More recent vintages since 2005 have been positively impacted by the effects of global warming. With slightly higher temperatures the grapes are ensured to ripen fully and produce more vibrant wine.
