Pale green gold in colour. Fragrant aromas of fresh stone fruits and citrus zest with subtle hints of roasted hazelnuts and a touch of flint. Flavours of freshly picked peaches and nectarines are complimented by a fine creamy texture on the mid palate, distinct and lively minerality and a refreshing citrus acid drive to finish. Enjoy with pan seared crispy skin salmon and citrus hollandaise sauce or tofu scramble with grilled asparagus.

Since this wine's debut in 1985, it has evolved into an elegant, modern Australian style. Sourced from the older plantings on the estate, this wine shows the heritage and knowledge gained over three decades of growing and making Chardonnay in Eden Valley.

A lovely accompaniment to pan-seared crispy skin salmon and citrus hollandaise sauce or tofu scramble with grilled asparagus.

Treatment

A single vineyard modern Australian Chardonnay with an elegant, layered palate of stone fruit and hazelnut underpinned by the fine creaminess of yeast lees contact and French oak. Fermented and matured for 11 months in new French oak barriques (28%), one year old French oak barriques (25%), balanced in older French oak barriques.

Cellaring Recommendations

Showing amazing restraint in its youth this wine will continue to build further richness and texture with long term cellaring.
