Bright crimson in appearance, with a bouquet of red cherry fruits, violets, campari and a side of cured meat. Red cherry fruits dominate the palate with a pinch of Chinese five spice for complexity. A silky elegance combined with a fine tannin structure to produce a medium-bodied yet powerful style.

Winemaking
The grapes were hand-picked and chilled overnight.  Processing the following day along a fruit sorting table and destemmed gently into our signature small fermenters.  Some whole bunches were used to contribute subtle stalk structure and a generous fruit profile. Working of the ferment by gentle hand plunging twice daily contributes to the soft fruit palate along with gentle pressing. Maturation for 10 months in all French barrels with 30% new and the balance older oak.

Vines: Fruit for this wine was sourced from the Yarra Yering planting of Pinot Noir, containing some of the oldest vines of their type in the Yarra Valley.  A mixed planting of four clones was undertaken in 1969, then followed up with replication in 1981 (top of the slope) and 1984 (bottom of the slope).

Yarra Valley Wine

The Yarra Valley wine region is the most important area of wine production in Victoria today, and with its proximity to Melbourne, also the most visited in the state.

Yarra Valley is split into the Upper Yarra and the valley floor. The Upper Yarra is cooler in climate due to its elevation and coupled with younger, fertile, red soils produces most of the region’s notable varietals: Chardonnay and Pinot Noir. The valley floor is warmer and has predominantly grey soils with pockets of granite and limestone.

Pinot noir has long been considered a notoriously difficult variety to grow. However, the cool climate and longer growing seasons of the Yarra Valley allow the fruit to develop full flavoured and ripe character.

Chardonnay in the past has long been associated with a deep oily, buttery style that experiences full malolactic fermentation and great amounts of oak. This style has since fallen out of favour and wine makers in the Yarra Valley have capitalized on this trend to produce leaner, acid driven Chardonnays that are closer in style to those from Burgundy.
