Description

GEOLOGY

The vines are located in the northwest of the commune of Beaune. Right next to the "Clos des mouches" plot. Soil: this parcel extends halfway up the hillside, on clay-limestone soils on hard limestone and scree. The pruning is done in Guyot with various green works (disbudding, trellising, topping).

VINIFICATION

Manual harvesting, sorting on the vines and then sorting on a sorting table (depending on the year, use of an optical sorting machine) at the winery.

BREEDING

After a light crushing and destemming, the grapes are put in stainless steel tanks. A small amount of whole grapes may be added depending on the condition of the raw material. After a cold maceration of a few days, the active phase of fermentation takes place with temperature control. During this phase, pumping over and/or punching of the cap is practiced. After pneumatic pressing, the wines are put in barrels (about 30% new wood) where the maturation takes place. This lasted 15 months, during which the malolactic fermentation took place. One month before bottling, the wine from the different barrels is blended in vats. No fining and a light lenticular filtration precedes the bottling. Some modifications on the overall technique can be made depending on the vintage. The bottling is done according to the lunar calendar.

TASTING

The bouquet is powerful with notes of spices and crunchy black fruits. Nice attack in mouth. A round, full-bodied wine with great elegance and length.

METS

It is a wine which will lend itself well to the agreements of powers, made cheeses, game or red meat. Serve at 14°c.
