2017 Snake & Herring Dirty Boots Cabernet Sauvignon

About This Wine

Four small blocks of Cabernet Sauvignon were selected for this blend: two from Yallingup, one from Wilyabrup and one block from the inland Treeton subregion. The Yallingup Cabernet Sauvignon vineyards have provided the earthy, chocolate, blackberry notes with fleshy texture; the Wilyabrup components contribute ripe blackcurrant and violet aromatics with dense and rich filigreed long tannins. The rolling hills of Treeton offer Cabernet Sauvignon with savoury elements of olive, herbs and dark chocolate with a sinewy tannin structure.

The 2018 season was a warm, even and dry season with a long mild summer ideal for ripening Cabernet Sauvignon. Good rains during the early season helped avoid stress with great open canopies balanced by average crop loads.

The 2018 Dirty Boots Cabernet Sauvignon shows the benefits of the perfect ripening conditions. Loaded with blackberry and mulberry fruit, some regional dried herb and bay leaf lift and fine powdery layered tannins the 2018 is one of the best Dirty Boots we have made. Aged for 12 months in new (21%) and older French oak after 4-6 weeks on skins post ferment has added weight and complexity to the tannin structure.

Approachable young yet destined to improve after another 5 years in bottle.
