James Halliday – “Fruit from a 1996-planted vineyard. Four weeks post-fermentation maceration, matured in French barriques (35% new) for 15 months. Virtually identical winemaking to the Original Vineyard Cabernet Sauvignon but, as always, this is the denser, more powerful and structured wine. On the nose there’s a core of perfectly ripened black fruits, crushed violets, dark chocolate and graphite. The medium bodied, firmly structured and persistent palate is equally good, and anyone fortunate enough to still have a bottle 10-15 years (if not longer) from now will be well rewarded.”
Huon Hooke – “Deep red-purple colour; bright. Crushed mulberry and cassis on the nose, very ripe fruit doing most of the talking. A subtle patina of pencilly oak. The palate is loaded with concentrated fruit and very drying tannins and this results in a cheek-sucking grip at the end. Full bodied, solid cabernet that will reward time in the cellar—indeed, it needs it. It’ll be worth the wait. Outstanding cabernet.”

Fresh looking with a deep, dark ruby colour and light purple hues. Pure cabernet. Fresh and lifted with the classic aromas of cassis, blackberry, violets and a light leafiness. Digging deeper, black cherry, red raspberries and notes of light cedar and wet tobacco that all swirl around that core of ripe fruit. This is elegant, medium bodied with a lightness of touch. Soft, velvet like tannins with just enough pippy crunch and firmness are there to reign in those fruit flavours and provide a sense of refreshment. Plus there’s a herbal nod that champions this variety before the red fruited acidity stretches the wine to its ultimate conclusion. Classic Yarra Cabernet. Taught, fragrant, lip smacking and refreshing.

Yarra Valley Wine
The Yarra Valley wine region is the most important area of wine production in Victoria today, and with its proximity to Melbourne, also the most visited in the state.
Yarra Valley is split into the Upper Yarra and the valley floor. The Upper Yarra is cooler in climate due to its elevation and coupled with younger, fertile, red soils produces most of the region’s notable varietals: Chardonnay and Pinot Noir. The valley floor is warmer and has predominantly grey soils with pockets of granite and limestone.
Pinot noir has long been considered a notoriously difficult variety to grow. However, the cool climate and longer growing seasons of the Yarra Valley allow the fruit to develop full flavoured and ripe character.
Chardonnay in the past has long been associated with a deep oily, buttery style that experiences full malolactic fermentation and great amounts of oak. This style has since fallen out of favour and wine makers in the Yarra Valley have capitalized on this trend to produce leaner, acid driven Chardonnays that are closer in style to those from Burgundy.
