DESCRIPTION
A really interesting Prosecco with vivid aromatics of citrus, hints of grilled nuts and yeasty nuances. The palate delivers a lemony freshness with a good phenolic grip and a nicely rounded mineral mouthfeel complemented by clean acids that finishes bone dry. Pair with salt cod croquettes.
Winemaking
Picked in the cool of night, then the grapes were lightly pressed to extract the purest of juice that was then transferred to stainless steel tanks for fermentation and maturation. The wine was then transferred to bottle for re-fermentation and to sit on its yeast lees or ‘ColFondo’ – as it is known in Italy – to produce a traditional Prosecco style.
