About This Wine
This wine is complex and tightly structured, made to cellar with confidence.
Deep red in colour, the nose has fine lifted red and black fruits, spice and some forest floor leady notes adding complexity. The palate is medium-bodied with complex black fruits and a fine tannin structure lending a long supple finish. An elegant expression of a single ferment. (40% new).
Vintage 2018 was warm and relatively early, with dry conditions and well-matured tannins allowing for wines to be left on skins for extended maceration. Cabernet Sauvignon from the Dead Morris vineyard (92%) was hand-picked on the 3rd of April and co-fermented with Dunstan Petit Verdot (8%). Following a 10-day ferment, the Tally had an extended maceration of 16 days on skins before pressing to oak. Matured for 15 months in fine-grained Taransaud Château barriques (40% new)..

Coonawarra Wine
The Coonawarra wine region is most known for its Cabernet Sauvignon that is produced on red “terra rossa” soil. This clay soil is one of the most notable in the “New World” of wine covering an area of only 15kmx2km. The terra rossa soil also overlies soft, penetrable limestone and it is this uncommon combination that makes this region so special.
“Cabernet Sauvignon is the most widely planted variety in the world and Coonawarra is one of the few regions where free draining soils and maritime ripening conditions achieve the ultimate varietal expression.” Coonawarra.org
From Coonawarra Cabernet you can expect a medium bodied red with powerful yet polished tannins, luscious dark berry fruit, herb and mint flavours as well as satisfying length.
While half of region’s production is Cabernet, the limestone soils also suit planting of Chardonnay, Riesling and Sauvignon blanc.
