This perfumed, floral and red fruited Grenache hails from a 0.7 hectare block of 43 year old vines planted in sandy soils. Bondar then selects the lowest yielding vines for this release. 75% of the blend spent 35 days on skins (with very gentle extraction) to build texture and structure; the remaining fruit spent a more regular 9 days on skins and was fermented cool to add lifted aromatics and freshness to the blend. ‘We're looking here to make a wine that is aromatic and bright, but has the tannin and acid structure to back it up’ states Bondar. Job done. The wine sees only minimal oak maturation, with just 25% of the wine matured in a single 5 year old barrel, so as to capture the youthful Grenache in all its raspberry, herby glory. The 2018 weaves together precisely these delicious characters, a core of textured, concentrated fruit and a spine of powdery tannins that energize the palate from start to finish.

The remainder spent nine days on skins and was fermented cool. 120 dozen made. It’s a marvellous grenache. It has a bit of beef, a bit of flesh, and yet it promotes dryness, spice and structure ahead of fruit. It’s not thick or massively intense but it’s convincing and indeed powerful, by its own design. Licorice, graphite, flings of dried herbs and bushes, a campfire smokiness. It’s textural, it’s aromatic, it’s a treat. The linger of tannin and flavour here is quite superb.
