Zesty and lifted acidity balances the dense sweetness, with a full body and a long, super-savory finish of dried apricots. Not an easy wine, strictly for connoisseurs, yet very good. Drinkable now, but it will last for decades."
Paolo De Marchi has used his white grapes only for Vin Santo since 1976. Grapes are dried for up to five months before pressing and fermentation and ageing last for eight years in 'caratelli' (small barrels) on the 'madre' or starter culture.
