California Chardonnay with more in common with Chablis than with the buttery stuff. Watson Ranch perches on a steep hillside at the very southern end of Napa Valley, looking out over San Pablo Bay — a rare seam of calcareous clay over limestone that runs through the tail end of the Vaca Mountains, planted in 1993 by Napa veteran Salvador Ramos. The site is windswept and cool. Duncan Arnot Meyers and Nathan Lee Roberts farm it organically and treat the fruit with the restraint that's made Arnot-Roberts one of California's most quietly influential producers: native yeast, old oak, no fireworks. The wine is bracing and saline — lemon, green apple, oyster shell, white flowers — Chardonnay that tastes of stone and sea.
