About this Wine

Bruno Paillard's Blanc de Blancs Grand Cru Champagne is a 100% Chardonnay Grands Crus, once known as the "lace" of Champagne because of its fine and persistent white mousse. The Chardonnays come exclusively from Grands Crus of the famous "Côte des Blancs", to which are added their own reserve wines. It is dosed in Extra-Brut (5g/l).

The House still uses the vinification method formerly reserved for "Demi Mousse" champagne to obtain a little less effervescence. The Blanc de Blancs Grand Cru is thus aged for 4 years on lees. This type of vinification, particularly adapted to Chardonnay, gives it a great finesse and a maximum of elegance. After disgorging, (the date is indicated on the back label), it is left to rest for 10 months in the cellar before shipping.

The color is very pale gold, with a very fine beading. The nose is lively and floral, with aromas of citrus fruits and white flowers and after aeration of almond and toast. On the palate, the attack is lively with citrus fruits and white flesh fruits. One feels the very particular minerality of the chalk. The finish is fresh and long.

Each bottle is protected from the taste of light by a fully compostable cellulose film which is to be kept until the moment of serving. The tasting will be ideal at a temperature of 8 to 9°, as an aperitif, or during a meal with fish.
