About this Wine

Formerly owned by the monks of the Pontigny Abbey, Monopole du Domaine Long-Depaquit "Moutonne" is a plot that is sheltered within a natural amphitheater at the heart of the Grand Crus, the historic part of the Chablis vineyards that dates back over one thousand years.
Located in both "Vaudésir" (95%) and "Preuses" (5%), this south/south-east facing plot with its ideal location and shape enable it to capture all of the sun's rays. The steep slope (nearly 40%) in the central part of the plot protects the vines from the North winds. Crossed by a wall, the lower part of the plot yields wines that are rich and structured while the grapes hailing from the upper part lend the blend its floral aspect and tautness.

Tasting

Complex nose that combines notes of white and yellow-fleshed fruit, citrus, and delicate flower scents. The palate is full and generous, marked by the minerality due to the marls found in this micro-terroir. This wine features pleasing freshness, a slight hint of well-integrated oak and exceptional length on the palate.

Food/wine pairing

Taste this wine with finely prepared fine fish and crustaceans (lobster, rock lobster…), or with roasted or stewed poultry and white meats.

Wines of Chablis

Arguably the most uniquely tasting Chardonnay in the world, most people are blown away to discover this special type of Chardonnay for the first time. The cool climate region produces wines with more acidity and less fruit flavours, but a unique flinty note derived from the soils.

Although considered a part of the Burgundy wine region, Chablis is closer in distance to Champagne which it shares an exceedingly rare and unique soil with. Kimmeridgian soil is not found anywhere else in the world except in southern England, Champagne and Chablis. A 180-million-year-old geologic formation of decomposed clay and limestone, containing tiny fossilized oyster shells, this soil type produces wines full of minerality, salinity, intensity, and finesse.

In Chablis they use a similar ranking system to that of Burgundy. From Grand Crus at the top, to Premier Crus, to Chablis and Petit Chablis at the bottom.
