Hand-picked at ~11.5baume and chilled overnight in the cool room.
Whole bunch pressed for very gentle extraction.
Wild fermented in a second fill French Barrique and left to mature of lees until blending for bottling.
NO filtration. No fining
Minimal sulfur and Vegan Friendly
