Laurent Savoye, under the Domaine des Combiers, farms 9 hectares of some of the steepest granitic slopes in the region. From his 100-year-old vines he fashions supple, silky reds made from the gamay grape. Hand harvested and cropped at low yields, his wines undergo a traditional, warm vinification that is allowed to rise to 50 degrees Celsius over 24 hours to allow for maximum extraction of texture, colour and aroma. This wine has been a revolution to us in this day and age where Beaujolais are regularly priced over $50.
