About this Wine

The south and east exposure in Vaillons means that it enjoys the morning sun. It has very shallow soil however the subsoil displays high concentration of Kimmeridgian limestone with some very compact slabs in some places. It is located on the left bank of the Serein River and was one of the first climats to be classified as a Premier Cru on this side of the river. Known to be hard work as the surface clays are sticky you have to work hard to get the best out of it!

This is a brilliant effort with striking citrus, white flowers, brisk acidity and solid extract showing lemon, green apple, liquid mineral, river stones and hints of straw, honey and zesty lime. It fills out on the palate but stays nice and tension filled with balance and an appealingly pure Chardonnay core throughout with Chablis terroir markers, like flinty spice and tangy crisp detail, light clove, fig and hazelnut play almost out of reach in the background. This well crafted white has control and finesse to really please hardcore Chablis nuts.

Arguably the most uniquely tasting Chardonnay in the world, most people are blown away to discover this special type of Chardonnay for the first time. The cool climate region produces wines with more acidity and less fruit flavours, but a unique flinty note derived from the soils.

Although considered a part of the Burgundy wine region, Chablis is closer in distance to Champagne which it shares an exceedingly rare and unique soil with. Kimmeridgian soil is not found anywhere else in the world except in southern England, Champagne and Chablis. A 180-million-year-old geologic formation of decomposed clay and limestone, containing tiny fossilized oyster shells, this soil type produces wines full of minerality, salinity, intensity, and finesse.

In Chablis they use a similar ranking system to that of Burgundy. From Grand Crus at the top, to Premier Crus, to Chablis and Petit Chablis at the bottom.
