The Domingo Mezcal Clasico Espadin 700ml is distilled from the Espadin variety of the Agave Angustifolia Haw, which is matured for 8 to 9 years before harvest. The agave hearts are cooked in a traditional underground oven lined with river stones and fuelled by a mix of dead woods, giving this mezcal its distinctive smoky flavour. The milling process, carried out by a horse-driven Tahona, and the natural fermentation in open wooden vats using indigenous yeasts, add unique layers of complexity to the aroma and taste. Notes of smoked wood, earth, and subtle hints of pepper permeate the spirit, leading to a long, satisfying finish.
