Winemaking
The fruit for this wine as harvested during the evening at low temperature to preserve primary fruit flavours. Crushed and fermented in stainless steel tanks at l l ·c, low temperature fermentation is essential to retain as much primary fruit lift and colour as possible. Our Ginger Prince Moscato gets further special treatment. We halt the fermentation process at about the half way point to ensure original fruit sugars are retained. We use specially select a Portuguese strain of yeast for this wine that is especially suited to the fermentation of fresh, fruity white wine.
