About this Wine

The wine shows vibrant plums and raspberry flavours with hints of mocha with generous cedar oak notes. The tannins are generous but gentle with a finesse that carries the berry and plums flavours to a long lasting finish.

Fruit was fermented in stainless steel tanks for 7 days with cool fermentation temperatures to preserve the delicate fruit flavours. Gentle pump over of juice was employed to avoid over extraction of less desirable tannins and promote a deep level of complexity. Post fermentation the skins were gently pressed to stainless steel tanks and inoculated to initiate Malolactic fermentation.

The wine was then racked into new and used French oak with a small percentage of used American oak. After 10 months of maturation specific barrels were selected for expressed concentrated fruit characteristics lifted aromatics with complementary oak that supports the fruit.

Coonawarra Wine

The Coonawarra wine region is most known for its Cabernet Sauvignon that is produced on red “terra rossa” soil. This clay soil is one of the most notable in the “New World” of wine covering an area of only 15kmx2km. The terra rossa soil also overlies soft, penetrable limestone and it is this uncommon combination that makes this region so special.

From Coonawarra Cabernet you can expect a medium bodied red with powerful yet polished tannins, luscious dark berry fruit, herb and mint flavours as well as satisfying length.

While half of region’s production is Cabernet, the limestone soils also suit planting of Chardonnay, Riesling and Sauvignon blanc.
