Pasqua is a winery where century-old history blends with vision, constant discovery, and a wholesome passion for transmitting an exclusive and contemporary potential from one generation to the next. “Mai dire Mai” (Never Say Never) is a concrete project, studied in minute detail, that starts from the earth, where everything begins.
The project takes root in the Montevegro vineyard, basking in the sun on a hillside nestled between two valleys in the eastern area of Verona. It is precisely here that this Valpolicella Superiore 2015, tasted today, comes to life. The “Mai dire Mai” is an expression of the best native Veronese varieties, led by Corvina. The attention to detail, from the vineyard to vinification, culminates in an aging period of one and a half years in fine 225-liter barrels.
All of this brings to the glass a Valpolicella Superiore with a brilliant, lively, finely lit ruby red color. On the nose, it reveals a broad, full bouquet step by step, where even the less experienced taster can essentially perceive the extreme cleanliness of the product. Alongside this purity, there are defined aromas of sour cherries and sweet tobacco. Nuances of medicinal herbs and faintly citrusy sensations complete a nose that harmonizes perfectly with the palate.
In the mouth, we find all the qualities appreciated in the glass; savory notes emerge on the palate, revealing a minerality accompanied by an elegant acidity that invites the next sip. Pasqua’s “Mai dire Mai” is contemporaneity: a fascinating product representing an embrace between history and passion. This wine casts a solid gaze toward the future, particularly towards the consumer who always loves to be heard.
It is best appreciated with grilled prime cuts of meat or charcuterie enjoyed with high-quality bread, but it is particularly suited for inventing a pairing that highlights its strong identity.

Venetian Wine

Veneto is in North Eastern Italy and is a high producing, multi-faceted wine region that does several different wine varieties well.
In whites you have the indigenous grape, Garganega, which is the main grape in Soave wines. Today you can find great value Soave wine but also producers focussing on low yield, high quality winemaking in the original Soave zone called Soave Classico. Wines made here are complex, exhibiting flavours such as ripe pear, yellow peach, melon or orange zest and have smoky and floral aromas with a fresh mineral finish. Much of Italy’s famous crisp and refreshing Pinot Grigio also comes from this region.
In red wines, Valpolicella is the most notable. This uniquely Italian wine is made from a blend of Italian grapes, predominantly Corvina with a minority of Rondinella, Molinara, Corvinone and other indigenous varietals. Valpolicella is made in a wide variety of styles. On one hand, you have light-bodied wines resembling Beaujolais Nouveau with a sour cherry flavour, alcohol content often around 11%. On the other hand, you have full bodied Recioto (desert red wine) and Amarone (dry red) that reach 15-16% alcohol. Both of these heavier wine styles have achieved DOCG status. Amarone is rich and intense with flavour and aroma notes often compared with Port.
Prosecco which has been quite a popular sparkling wine variety in Australia in recent times also comes from the Veneto wine region.
