Clay-limestone soils, rocky soil. West/Northwest exposure. Altitude 380m, yield of 65 hl./ha.

Grape variety
Clairette, (locally called "le salé"), vermentino, vines planted in 1954, 2010 and 2011… with a touch of Ugni Blanc planted in 1956 and Vermentino planted in 2012.

Harvest and Vinification
Manual harvest. Selective sorting on beltimmediately upon entering the cellar. The cropis softly crushed, destemmed and soft pneumaticpressing.) Fermentation and Malolacticfermentation is blocked. Natural tartaric precipitationscreated due to cold temperatures inthe vat.

Maturation and Production
Concrete vat and stainless still. Bottled in January. Production around 400 hl, about 53,000 bottles.

Tasting
Color is clear and limpid. Fine bouquet with a floral and mineral character with notes of white peach and lemon. Lively and candid on the palate, a precise wine, influenced by the limestone and flint, delightfully fresh.
