Made from 80% Pinot Noir and 20% Chardonnay grapes. After destemming, the grapes are crushed without any pressure to obtain free-run must, the most precious part of the juice. The first fermentation takes place in temperature-controlled stainless steel tanks, followed by almost nine months ageing in tank. The second fermentation is followed by almost 42 months ageing on lees. Riddling is done by hand, with zero dosage at disgorgement.
The aromas are soft and delicate with floral and citrus scents and hints of orange blossom, shortcrust pastry and dried fruit, with a savoury mineral and structured palate and a marvellously persistent bead.
