"What a sensational wine. Perfumed and powerful with tremendous concentration and power. Used some concrete fermentation and stainless steel. Has beautiful elegance and weight through the palate with fine chalky tannins and fine-grained oak influence. Has such ethereal aroma of violet and red berry. Tremendous power here yet it’s elegant and pretty. This is 100% cabernet."

Cabernet Sauvignon is etched in the Forest Hill Vineyard story, first planted in 1965 alongside Riesling. The ironstone gravel soils following the Hay River and long growing season in Mount Barker produce classic wines which are concentrated, powerful, structured and laden with enticing dark fruits and delicate savoury characters. Hand-picked from selected areas of 1975 plantings of dry grown Cabernet Sauvignon on the crest of the block with higher gravel content. Hand sorted at the winery and destemmed into multiple small fermenters (Nico Velo Concrete Tank, 600L oak Demi-muids, stainless steel open fermenter) for cold soaking prior to fermentation. The wine was then pressed after ~20 days on skins to French 300L hogsheads (~25% new).  Blended and bottled after 12 months maturation in barrel.
