About This Wine
Hand-picked fruit is destemmed in to open-top fermenters as whole berries and left to start fermenting naturally. It is not touched until a 2-3° drop in baumé, which allows fermentation to occur inside the grape berry, increasing the aromatics of the finished wine. Once the wild yeast ferment gets underway gentle extraction occurs with daily plunging followed by two weeks on skins post ferment. The wine is pressed in to mostly older French oak for approximately 10 months.
The 2021 is so expressive, a bright nose of red sorbet fruits - strawberries and red cherries, and a background of gamey notes. On the palate it's concentrated with flavours of savoury, red fruits, pure and bright, with pretty, dried herbs, dusty tannins, and great length.

Mornington Peninsula Wines
South of Melbourne, the Mornington Peninsula grape growing region has a cool, maritime climate that is most known for their Pinot Noir and Chardonnay production. Other varieties that have seen some success here include Pinot Gris and Tempranillo.
However, it does seem that Pinot Noir is their focus judging from the fact that The Mornington Peninsula International Pinot Noir Celebration is held once every two years. The event displays the region’s capabilities in making some of Australia’s finest Pinot Noir in front of local and international audiences.
