About this Wine

Hand-crafted and made with minimal additions and preservatives, these are wines made of the vineyard. The grapes are picked at optimal ripeness, minimally handled in the winery and fruit vibrancy is not hidden by non-essential artifact. Seeking first and foremost fruit expression, drinkability and to be a great accompaniment to food. Don’t let the size fool you, these are wines you’ll want to drink.

Winemaking: Sourced from premium Adelaide Hills vineyard, fruit for this Gris was pressed and then left for three hours on skins (the juice and the crushed berries) to give the palate some texture. It was fermented cool and then matured on yeast lees for 7 months in three-year old barrels.

2021 Vintage: 2021 was an outstanding vintage for the Adelaide Hills and it came as a welcome relief after the appalling conditions of the previous year. A cool, wet spring helped with soil moisture followed by a warm November ensuring no damaging weather conditions. Cool and calm weather followed that meant even ripening and good acid retention. A mild end to summer and a cool Autumn saw fruit hanging with no disease or extreme heat posing a problem. Yields and quality were up across the board.

Tasting Note: Soft, approachable and well loved - just like the Wombat - Pinot Gris is a little giant of the wine world. Coming from the cooler climes of the Adelaide Hills you’ll see notes of vibrant pear and appleon the nose that are relected on the fulsome and generous palate all balanced by crisp acidity. Drink with seafood dishes or roast pork.

Adelaide Hills

The Adelaide Hills is one of the largest geographical wine regions in Australia, and amongst the most diverse in terms of climate, soil and topography. Because of this, many different varietals are planted here with the most dominant being Sauvignon Blanc, Chardonnay, Pinot Noir and Pinot Gris. It is generally thought of as a cooler region, especially when compared to neighbouring Barossa to the north and Mclaren vale and Langhorne Creek to the south.

NZ Marlborough Sauvignon Blanc has been popular in Australia for a while now, but Adelaide hills Sauvignon Blanc (the most planted grape in the region) could be considered the Aussie Savvy Blanc. From www.adelaidehillswine.com.au about their Sauvignon Blanc: “Wines that are textured, edgy, vibrant and dry with exceptional fruit definition, length and crispness that marry superbly with summer seafood.”

You can also find some cool climate shiraz from the Adelaide hills, defying the more common big bold style that is usually seen in Australian Shiraz.
