About this Wine

THE WINE
Bright ruby red in the glass, this wine displays lifted aromatics of strawberry, violets and cinnamon, with an underlying hint of Provençal herbs. The palate is mid weight and juicy with flavours of plush cherry and berry fruits, soft rounded tannins and a lingering savoury finish.

VINEYARD
Made with fruit hand-picked from 80-year-old bush vines that grow in terra rossa soil over limestone at a unique site in Leasingham.

WINEMAKING
Our preference for this wine was to maintain some whole berries in the fermentation (to enhance aromaticity). The fruit wasn't crushed, but gently de-stemmed into small one- and two-tonne open fermenters with 10% whole bunches included for structure and complexity. Wild fermentation was used with gentle pigeage only, before basket pressing into seasoned oak hogsheads, where the wine matured for 6 months prior to racking and bottling without filtration.
