About this Wine

This wine is produced from organically grown Nero d’Avola grapes
mainly on the estate of Sambuca di Sicilia in the province of Agrigento, Scilly.
The grassy vineyards lie on gentle hillslopes 300 metres above sea level which are particularly well ventilated and characterised by clayey soils. The vineyard is located in the area of the estate most
exposed to winds, so as to keep cryptograms in check naturally.

Winemaking: The grapes are destemmed and fermented with the skins for 6-8 days at 22-24°C when they become perfectly ripe in terms of aroma
and polyphenols. Malolactic fermentation takes place with selected
bacteria and maturation in steel for 10 months. A small part of the
wine is aged for 6 months in French oak barriques.

Vineyards: Organic Certified

Color: Deep ruby red with pleasant violet reflections.

Nose: Intense and enveloping, notes of currant, wild strawberry and pomegranate stand out.

Palate: Soft and velvety. It distinguishes itself for its particular
freshness and fruitiness.

Pairings: With its elegant fresh savor, this Pinot Grigio is the perfect complement to appetizers, soups, pasta, white meats and fish.

This wine is produced from organically grown Nero d’Avola grapes
