Huon Hooke – Full pink colour, deep for a sparkling rosé, the bouquet reserved and showing some mellowness from age, the palate full of flavour and very dry with a lip-smacking firm finish. Low dosage and some tannin grip. This would be good with food, and used more like a light-bodied sparkling red than a Champagne style. (80% pinot noir, 20% chardonnay) Drink: 2020-2045
