This 5th opus in the Les Éphémères collection launched by Rhums Saint James is an AOC Martinique agricole rum distilled in 2005 and bottled brut de fût.
Marc Sassier, the cellar master at Rhums Saint James, is behind this series of 4 vintages that pay homage to the distillery's great vintages: 2001, 2007, 2006, and now 2005.
Distillation was carried out in a Creole column, in accordance with AOC specifications. The rum was placed in 320-liter American oak barrels on December 20, 2005.
No topping-up or reduction was carried out, and the barrels were unloaded in October 2022. The 16 years of aging were carried out entirely in the cellars located in Sainte-Marie, Martinique.
