Cabernet Sauvignon can be a simple sip or a symphony of the senses, a moment of pleasure or an eternity of contemplation. Only the poet can know, so stop thinking and surrender. Dark, black-violet in colour; a little brooding. Mulberry fruits and tobacco leaves drying. Pencil shavings. Cassis and blackberries - blackberries eaten greedily. These Cabernet aromas are dove-tailed into the bouquet of subtle oak - sarsaparilla and cola nut. Then aromatically returns: mint, spearmint, and the most impossibly, barest whiff of tomato leaf. A hand-laid, mortar-free, dry stone wall of Cabernet's antediluvian quality: tannin. This is a dry, long and carefully structured red wine. All dark berries and fruits, mint, and eucalypt lurking in the shadows of the tannic structure, but lurking never-the-less. The brighter blackberry flavours provide a cooling and refreshing quality, promising age-worthiness, but also providing delight now

Coonawarra Wine
The Coonawarra wine region is most known for its Cabernet Sauvignon that is produced on red “terra rossa” soil. This clay soil is one of the most notable in the “New World” of wine covering an area of only 15kmx2km. The terra rossa soil also overlies soft, penetrable limestone and it is this uncommon combination that makes this region so special.
“Cabernet Sauvignon is the most widely planted variety in the world and Coonawarra is one of the few regions where free draining soils and maritime ripening conditions achieve the ultimate varietal expression.” Coonawarra.org
From Coonawarra Cabernet you can expect a medium bodied red with powerful yet polished tannins, luscious dark berry fruit, herb and mint flavours as well as satisfying length.
While half of region’s production is Cabernet, the limestone soils also suit planting of Chardonnay, Riesling and Sauvignon blanc.
