2022 Hollick Sparkling Merlot Coonawarra – The Hollick Sparkling Merlot is a twist on Australia’s unique sparkling red wine category, which tends to be dominated by Shiraz. Utilising this classic grape from its Coonawarra vineyards in a new way has made it evident that Merlot lends itself ideally to wines of this style. Intense fruit flavours and soft structure carry through its secondary fermentation, creating a thoroughly appealing sparkling red wine. The base wine for the Hollick Sparkling Merlot is fermented as usual for dry red wine, and matured in two-year-old French and American oak for eighteen months prior to re-fermentation. The resultant wine is liquered to a predetermined sweetness upon final packaging, and is recommended for further bottle maturation.
Vibrant purple with an explosion of bubbles, this wine will develop brick red hues with bottle maturation. Clean and fresh aromas of ripe blackberries and cherries are enhanced by chocolate/mocha notes. The palate has lively flavours of Cherry cola, briar fruit and dark currants, which are further enhanced by underlying flavours of subtle oak and soft tannins. Cellar for 5 years or more to experience the rich fruitcake character of aged Sparkling Merlot.

Coonawarra Wine
The Coonawarra wine region is most known for its Cabernet Sauvignon that is produced on red “terra rossa” soil. This clay soil is one of the most notable in the “New World” of wine covering an area of only 15kmx2km. The terra rossa soil also overlies soft, penetrable limestone and it is this uncommon combination that makes this region so special.
“Cabernet Sauvignon is the most widely planted variety in the world and Coonawarra is one of the few regions where free draining soils and maritime ripening conditions achieve the ultimate varietal expression.” Coonawarra.org
From Coonawarra Cabernet you can expect a medium bodied red with powerful yet polished tannins, luscious dark berry fruit, herb and mint flavours as well as satisfying length.
While half of region’s production is Cabernet, the limestone soils also suit planting of Chardonnay, Riesling and Sauvignon blanc.
